My Mother’s Macaroni Salad!
Since we are so close to summer, I thought I’d share a family recipe with you. My mother used to make this for all of our summer family holidays, and now that she is gone, I make this to share! I hope you love it as much as our family does!
Ingredients:
1 box of pasta—I used elbow macaroni, but you could also use fusilli (also known as squiggly- hehe)
1/2 of an onion (more if you prefer) diced
1 red or green bell pepper, diced
3-4 stalks of celery, diced
1 can of tuna- I use the chunk light in water
1-2 cups of mayonnaise (depending on how much mayo you like)
1/3 cup milk
Directions:
Salt the water & cook the pasta using the directions on the box. While the pasta is cooking, dice the onion, pepper & celery. Set aside
Mix the mayonnaise & the, milk so the mayo becomes smooth.
Open & drain the tuna. (I save the juice from the tuna for my kitty).
Once the pasta is cooked, drain & rinse with cold water. Using a large bowl combine all of the ingredients and mix well.
This can be made ahead of time to save you time on the day of your big barbecue or event.
You may choose to add more mayonnaise before serving—again it is up to your taste!
Now simply enjoy your new macaroni salad!
