Bubbles & Brunch……
Last weekend I threw a Bubbles & Brunch at our home in honor of my bestie Susan. Susan is getting remarried in a few weeks & we wanted to celebrate her.
The guest list was created, the Pinterest board began & my creative juices began to flow!!
I requested the help of my “niece” Maura for assistance with a ballon arch. I love them yet have never used one as decorations for a party. She recommended where to purchase the ballons & then she came over & created the arch for me. I was also able to purchase some great items through Amazon for signs & decorations!! The last touch for the party—the tablescape. I went to Produce Junction as soon as it opened the morning of the brunch & bought hydrangeas & a baby’s breath type flower & used vases I already had! I used the leaves from the hydrangeas to place inside of the glass vases to hide the stems of the flowers. I was even able to grab a bag of rose petals to sprinkle on the table for an added touch. Add some fun Luminara tea lights in pretty votives & voila!
The menu planning began with finger foods—scones from David’s Cookies, tea sandwiches, fruit tray, crunchy veggies, mini quiches, charcuterie board and a Mimosa bar.
I found a new recipe on Pinterest for cucumber finger sandwiches that I just had to share with you. Everyone who enjoyed them raved about how delicious they were.
Ingredients
Produce
• 1 tbsp Chives, dried
• 1/4 tsp Dill, dried
• 2 English cucumbers, thin
• 2 cloves Garlic
• 3/4 tsp Onion powder
Condiments
• 1 1/2 tbsp Lemon juice, freshly squeezed
• 1/3 cup Mayonnaise
Baking & Spices
• 1 Pinch Black pepper
• 1/2 tsp Kosher salt
Bread & Baked Goods
• 1 (1 pound) loaf White bread
Dairy
• 1/3 cup Butter, unsalted- softened
• 1 1/2 packages Cream cheese- softened
• 1/3 cup Sour cream
Combine all the ingredients using a mixer, I used my Kitchen Aid hand mixer. Then spread the amount you’d like on assorted bread shapes. I used a heart shaped cookie cutter & a biscuit cutter to create hearts & circles. I also removed the crust from the bread & sliced the bread into rectangles. I then spread the cream cheese mixture on to the bread, placed a few slices of English cucumber on the mixture, then garnished with some dill. Easy & delicious!
Everyone had a great time & enjoyed celebrating Susan!!

For the final touch—I made sure the Finnegan was dressed for the occasion! He loved getting extra treats from everyone! Doesn’t he look so handsome in his tuxedo!?!?!
Party planning doesn’t have to be hard—have fun with it!!
