Apple Pie/ Pumpkin Cake Recipe
Apples:
INGREDIENTS:
• 4 c. chopped apples ( 4 apples) I don’t peel them
• 4 Tbs. Sugar
• 4 Tbs. Butter
• 1 tsp. Cinnamon
INTRUCTIONS
• Melt Butter in a frying pan. Add apples, sugar and cinnamon. Saute 10 mins or more until caramelized. Reserve on the side.
Cake:
INGREDIENTS:
• 1 ½ c. All Purpose Flour
• 1 c. Brown Sugar
• 3 Tbs. Sugar
• 1/2 c. salted butter grated cold and warmed up to room temp.
• 1/4 tsp. salt
• ¾ c. Canned Pumpkin
• 1/3 c. Sour Cream
• 2 ¼ tsp. Pumpkin Pie Spice ( this is for you Angel!!!)
• 1 tsp. Baking Soda
• 2 Large eggs room temp
INTRUCTIONS
• Preheat oven 350.
• Grease a 9” spring form pan.
• Combine the first 5 ingredients in a bowl, beat or use a pastry cutter until the mix looks like coarse meal. Reserve ¾ c. of this mix for the top!
• Beat in all of the remaining ingredients, into the dry mix, until the batter is smooth.
• Pour batter into pan. Top with apple mix, sprinkle the reserved ¾ c. dry mix for a streusel topping!
• Bake for 1 ¼ hours, I check after 1 hour. May need up to 15 mins more. ( Toothpick or cake tester) Depends on your oven.
• Cool, loosen the side and remove the ring.
