Irish Potatoes:
INGREDIENTS:

• 8 oz. cream cheese, softened

• 2 lbs. confectioners sugar
INSTRUCTIONS:
1) Add the butter, cream cheese, and vanilla in a bowl and beat on medium until well mixed.
2) Add sugar and coconut gradually, mixing in between each cup.
3) Put in a bowl and refrigerate for 15-20 minutes.
4) Pour you cinnamon into a small bowl.
5) Take the coconut mixture out of the refrigerator. Take a spoonful of the mixture and shape into a ball.
6) Roll the ball in the cinnamon and place on a cookie sheet lined with parchment paper.
Makes about 40-50 Irish Potatoes
