Lemon Sugar Cookie Recipe
Yum, yum, I want some!
Ingredients
• 1 c. softened butter ( yep, 2 sticks folks!)
• 1 1/2c. sugar ( granulated)
• 1 egg and 1 egg yolk
• 2 1/4 c. all-purpose flour
• 1/2 tsp baking powder
• 1/4 tsp. salt
• 1 ½ tsp. Vanilla
• Zest of 1 lemon
• 1 Tbs. lemon juice
Directions
• Preheat oven to 325. Line cookie sheets with parchment.
• Cream butter, sugar and single egg yolk. Add in the egg. Then add Zest and Vanilla.
• Stir Flour, baking powder and salt together. Stir into butter mixture just until incorporated. (I do this all in my KitchenAid. )
• In a separate bowl mix: -1/3 c. sugar ( granulated) -Zest from one lemon
• Scoop 1Tbs. of cookie dough and dip firmly, one side, in the sugar. Place the cookie ball ( non-sugared side) down on the parchment. I smoosh in down a little to be like a thick coin. Space about 1”apart. Repeat.
• Bake 12 min until lighted browned edges.
• Cool on cookie sheet and eat
