Roasted Strawberry Cream Cheese Bundt Cake Recipe
This one has a lot of steps but, is neighborhood approved! I roast the berries the night before to break up the steps.
Roasted strawberries: I use them all the time in yogurt and on top of ice cream too!!!
Ingredients
• 2 lbs Strawberries, washed thoroughly, sliced and hulls removed.
• 1/3 c. sugar
• 1 ½ tsp. vanillaDirections
375 oven
• Line a 13×9 pan with a single sheet of aluminum foil.
• Toss strawberries with sugar and vanilla, spread out in pan.
• Roast 30 mins, stir once after 15 mins.
• Place berries in a strainer over a bowl. Reserve the juice and berries separately.Cake: have all ingredients room temp.
Ingredients
• ¾ c. butter
• 2/3 c. Cream Cheese ( 10 tbsp.)
• 3 lrg. eggs
• 1 1/4c. sugar
• ½ tsp. salt
• 1 tsp. Vanilla
• ½ tsp. strawberry extract
• 2 ½ c. All- purpose flour
• 1 tbsp. Baking powder
• 2 tbsp strawberry juiceDirections
• Cream butter, cream cheese, sugar and 1 egg together. 2-3 mins
• Beat in the other 2 eggs one at a time. Then add extracts and salt.
• Alternately, beat in on low, the flour/baking powder mix and the 2 tbsp strawberry juice. Beat only until all combined and smooth.
• Stir in all of the strained, roasted strawberries.
• Spray 10c. bundt pan using baking spray with flour. Pour in batter.
• Bake for 45 mins. Cover with foil and continue baking for 15 more mins. Using a cake tester, test the cake, make sure it comes out clean.
• Cool 20 mins, loose cake and turn out on a cake plate.Glaze: to keep the cake moist and extra flavor.

• 1/4c. Water
• 2 tbsp. Sugar
• 1/4 c. Strawberry juiceDirections
• Boil water and sugar together.
• Stir in the Strawberry Juice.
• Brush the glaze all over the warm cake.Strawberry Glaze: don’t skip , it’s good!
Ingredients
• 1 ½ c. Powdered sugar
• 3 -4 tbsp Strawberry juice
• 1 tbsp. melted butterDirections
• Whisk the sugar, butter and 3 tbs of the juice together. If too stiff to pour add more juice.
• pour immediately on cooled cake.I hope you all will enjoy this one, we sure did at a neighborhood party! XOJ
