Strawberry Cake with Strawberry Cream Cheese Frosting Recipe by John Shrader (Designer)
Preheat the oven to 350.
INGREDIENTS:
• 3 c. all purpose flour, sifted with baking powder
• 1 tbsp. baking powder
• 1 c. milk
• ½ c. strawberry jam
• 1 tsp. red food coloring
• 2 c. sugar
• 1c. oil ( corn or canola)
• 1 ½ tsp. vanilla
• 1 tsp. strawberry extract
• 3 eggs + 1 egg yolk
INSTRUCTIONS:
• Grease and flour 2, 9” cake pans or 3, 6” heart shaped pans. I always line the bottoms of pans with waxed paper.
• Whisk milk and jam together.
• Beat sugar, oil and flavorings together for 3 mins. It will be light and fluffy!!!
• Alternate beating in, on low, the dry and wet ingredients into the egg mixture. ( in 3 additions)
• Pour into prepared pans. Bake for 40 mins. Test with a toothpick in the center. It should be clean.
• Cool for 20 mins and unmold. Cool completely.
Frosting:
INGREDIENTS:
• 8oz cream cheese, softened
• 12oz butter, softened
• 1 tsp. red food coloring
• 1 tsp. strawberry extract
• 1 tsp. vanilla extract
• 2 ½ -3 c. powered sugar
• 1 Tbsp milk, more or less
INSTRUCTIONS:
Cream the cream cheese and butter together. Beat in 1 c. of sugar. Add extracts. Beat in remaining sugar and milk as needed to make a spreadable frosting. ( strawberries dipped in remaining frosting is great!) Frost cake and Eat!!!!!
