Strawberry Delight Recipe
(My Grandmother’s recipe, Elvie Mothershed)
Ingredients
350 oven
• 2c. Sugar
• 3c. All- purpose flour
• 1tsp. Baking Powder
• 1/4tsp. Salt
• Tbs. Cinnamon
• 1 ½ c. neutral flavored oil ( I sometimes sub ¼ c. milk for 1/4 c of the oil)
• 4 eggs well beaten
• 3c.Sliced or chopped Strawberries or more
• 1 ½ tsp. Vanilla Extract
Directions
• Mix all the dry ingredients together in a large bowl.
• Mix all the wet ingredients( including the strawberries) together in a smaller separate bowl.
• Pour the wet ingredients into the dry ingredients and mix together just until incorporated. Like making muffins.
• Spray 2, 5×9 Loaf pans with cooking spray. I always line the bottom of my pans with waxed paper. Divide batter between the 2 pans.
• Bake for 1 hour and check text with a toothpick. Should come out clean. If not, bake no more than 10 more minutes.
• Cool in pans for 30 mins. Unmold. Is is a moist cake.
