      Susan’s Chocolate Bourbon Balls

      INGREDIENTS:

        • 1/2 Cup of Bourbon
        • One 6-8 oz. package of Nestle Semi Sweet morsels (it’s the smallest package sold)
        • 3 TBS corn syrup (light or dark I usually use the light)
        • 2 1/2 cup vanilla wafer crumbs (I put the cookies into a large zip lock bags and crush them using a rolling pin)
        • 1 cup chopped nuts (optional- I don’t use)
        • 1/2 cup Confectioners’ Sugar
        • Granulated Sugar

      INSTRUCTIONS:

      Melt chocolate in a double boiler.

      Remove from heat, add corn syrup and bourbon, mix until combined.

      In a large bowl combine vanilla wafer crumbs and confectioners’ sugar (and nuts if you use them).

      Add chocolate mixture, mix well.

      Let stand for 30 min then form into 1-inch balls and roll in granulated sugar. Let season in covered container for several days.

      Makes approximately 4 1/2 dozen

      SOME EXTRA TIPS:

      **Usually one box is of vanilla wafers will equal 2 1/2 cups of crumbs.

      **Chocolate melts fast, in a double boiler it won’t burn but it can get funky.

      **It’s tempting to add extra bourbon- DON’T! it will make the mixture to wet and impossible to roll.

      **Rubbing some Crisco on your hands before you roll will help in keeping it from sticking to your hands as much.

      **Before you roll do not wash your hands with scented soap- it will affect the taste.

      **Seasoning a few days does make a difference, they taste better!

      How much bourbon do you use in the Chocolate Bourbon balls? It was omitted in the recipie.

      Would this work with rum as well? Rum balls!
